Sausage, Spinach, Mushroom & Feta Quiche

Serves: 4-6

8 eggs

Sea salt and freshly cracked black pepper

½ lb. ground sausage

1 small onion, diced

2 cups heavy whipping cream

2 cups fresh spinach, roughly chopped

1 cup fresh mushrooms, thinly sliced

1 cup feta cheese

Sour cream

Directions:

Heat oven to 375°. In a small bowl, beat the eggs with the salt and pepper using a wire whisk.

In a skillet, cook the ground sausage until browned through. Add onion; sauté for 2 minutes and then remove from heat.

In a medium bowl, combine the egg mixture with the sausage mixture; stir well. Add remaining ingredients and pour into a buttered 9x13 glass baking dish.

Bake for 40-45 minutes or until middle is set.

Remove from oven and allow to cool 5 minutes before serving. Top each slice with a dollop of sour cream.
